Keto Pickle Juice Brine Turkey Recipe Instructions

  1. Peel the rosemary off of the steam and dice a few of them to get the oils from the leaves.
  2. Place the defrosted turkey into a large poultry bag or cooler (like I did).
  3. Pour all the ingredients (pickles juice, water, and seasonings) on top of the turkey that sites in the cooler. Make sure the liquid is covering most of the turkey. Add more water if you don’t have enough pickle juice to cover it.
  4. Add a bag of ice over the turkey to allow it to stay cool for the next 12+ hours. Or put your poultry bag in the refrigerator if you have room. Ideally, you want to marinate this turkey more than 12 hours but no more than 24 hours ahead of time.
  5. For each pound of meat, you should refrigerate it for one hour. For example, if you have a 12 lb turkey, you need to refrigerate this for 12 hours. Add ice to the cooler as needed. I usually only need one bag of ice to keep it cool before I cook this turkey.
  6. Remove the turkey from the brine marinade. Discard the brine marinade.
  7. Place the turkey into the Reynolds turkey steam bag and place about 2 more cups of water in the bag so it can create a steam when it’s cooking. I like to cook the turkey with the breast down in the juices too. It always comes out perfect! No need for basting the turkey or monitoring it every hour either.

Here’s the best part. The turkey flavor was amazing! The pickle juice brine recipe did its job without sugar! I’m so impressed!! It didn’t have a pickle flavor either. It took on the flavor of all the seasonings I added!! So good! You have got to try this!

FAQs

Will pickle juice break ketosis? ›

Often, people on the keto diet will recommend drinking pickle juice and eating pickles. It's a great source of potassium and sodium, and those electrolytes are important to healthy body functions. The vinegar in pickle juice can also help curb sugar spikes, helping you stay in ketosis.

What is the least amount of time to brine a turkey? ›

Brine your turkey for 12 to 24 hours. The longer the better, but honestly, even a quick brine does wonders for the turkey. If you only have a few hours before it needs to go in the oven, then it's still worth doing. Be sure to keep your turkey covered and refrigerated while brining.

How much salt in wet turkey brine? ›

The basic ratio for a wet turkey brine is to use 2 cups of kosher salt or coarse sea salt for every 2 gallons of water. The benefit of a wet brine is that it can work slightly quicker than a dry brine because it infuses the entire turkey in a salty solution.

Does brine tenderize turkey? ›

Brining your turkey in saltwater adds extra moisture to the lean bird, helping it stay juicy as it roasts (even if you accidentally overcook it). The salt in the brine also seasons the turkey and breaks down some of its proteins, making it more tender.

What puts you in ketosis fastest? ›

Fasting for 12 hours is the fastest way to get into ketosis.

What cancels ketosis? ›

Eating more than 50 grams of carbs may disrupt ketosis.

With keto diets, however, carb restrictions vary from person to person. Some people can eat more and still stay in ketosis, whereas others may need to restrict their carb intake more in order to stay in ketosis.

What is the formula for brine? ›

Basic Brine

Place that volume of water in a container large enough to hold the brine and the meat. Add 1 tablespoon of salt for every cup of water you used and mix until the salt is completely dissolved. For example, if you are using 1 gallon (16 cups) of water, add 16 tablespoons (1 cup) of salt.

Can I brine a turkey in 2 hours? ›

Step 3: Start Brining Your Turkey

For a 12-pound turkey, cover and marinate in the refrigerator 8 to 12 hours. For a turkey larger than 12 pounds, increase the brine so the turkey will be totally submerged when weighted down with the plates. Marinate for at least 12 hours.

What happens if you don't brine long enough? ›

Give It Time

The worst thing you can possibly do is try to rush a dry-brining project. If you try to cook a steak that you've salted before the moisture on the surface has dried, you're going to end up steaming the surface of the meat initially, preventing good browning from happening.

What if turkey is not fully submerged in brine? ›

If the turkey is not fully submerged in the brine, mix another batch -- three tablespoons salt to one-quart water is the proper ratio -- and add enough of it to cover the turkey. Let the turkey rest in the brine for one hour.

Do I rinse turkey after brining? ›

You should always rinse the turkey after wet or dry brining. Once rinsed, you can let the turkey air dry, uncovered, in the refrigerator for several hours, or pat it dry with a paper towel.

Does turkey have to be fully submerged in brine? ›

Be sure that the brine is cold before adding the thawed turkey. Place the turkey and brine in a brining bag or non-corrosive food-safe container, making sure the turkey is fully submerged in the liquid. Cover and keep in the refrigerator for the recommended amount of time.

Does a turkey need to be refrigerated while brining? ›

The amount of time will depend on the type of brine you use; however, do not brine any longer than two days and always keep the turkey and brine refrigerated (at 40°F or less). Remove turkey from brine after the recommended time.

Do brined turkeys cook faster? ›

Continue to roast until internal temperature reaches 165°F. NOTE: A brined turkey cooks slightly faster than an unbrined turkey, so check the internal temperature frequently. Remove turkey from the oven and allow to stand for 20 minutes before carving.

Are Butterball turkeys brined? ›

Butterball Fresh Whole Turkey is all natural*, never frozen, gluten free, and raised without hormones on American farms. Every fresh turkey is pre-brined before packaging for meat that's always tender and juicy. *All natural means minimally processed and no artificial ingredients.

Does pickle juice break intermittent fasting? ›

To prevent the symptoms of electrolyte deficiency, intentionally supplement your electrolytes throughout your extended fast. Our LiveBrine Probiotic Pickle Juice product is especially popular for intermittent fasting (IF) and because it has no sugar, calories or macronutrients, pickle juice will not break your fast.

Will ACV kick me out of ketosis? ›

ACV contains minimal carbs, making it keto-friendly. Nonetheless, white vinegar and rice vinegar are carb-free alternatives that may be even better.

Does pickle juice take you out of fasting? ›

Pickle juice. Depending on the brand, at 3.5 ounces, pickle juice contains less than 1 gram of carbohydrates, about 500mg sodium, 170mg potassium and 23mg calcium. Because pickle juice contains less than one gram of carbohydrate, it will not spike insulin and therefore it won't break a fast.
