This quick and easy Healthy Zucchini Bisque is perfect for chilly winter days!

We were hanging out with my Mom a couple of weeks ago (she’d came up from Nashville to visit Robbie), and she was telling us about this crazy neighbor she has. Within the first month of moving into her house, this woman had filed a complaint withthe neighborhood association because my mother was digging up plants in her yard.
Now to truly appreciate this story, you should know that my Mom is one heck of an awesome gardener. Her yard back in Raleigh was often highlighted on garden tours and the like. So for someone to file a complaint on a new neighbor without even stopping by to say hello…yeah, she must be best friends with the Grinch. (Oh, and these were dead plants my Mom was digging up.) In case you’re wondering, the neighborhood folks stopped by and told my Mom not to worry. Apparently this neighbor of hers likes to file complaints. Lots of ’em. She’s that neighbor.
This story really made me appreciate how lucky we are here in New York. We had a rough first go at upstate New York between a bad apartment and then several really bad contractors once we moved into our house. But one thing we did have…awesome neighbors. For the most part, you can’t really control who your neighbors will be. I guess you could buy a house in the middle of a huge field in South Dakota, but what fun would that be? We got extremely lucky and ended up with several really great neighbors.
Not too long after we moved in, one of these neighbors invited us over for dinner, and he made his signature zucchini soup. I was amazed at how he pulled so much flavor out of zucchini! We grow zucchini every summer in the garden, and we typically just grill it up with some Italian seasonings and olive oil. But a soup? With zucchini? Sure enough. And this soup was amazing. I was already asking him for the recipe before dinner was even over!
Because we associate zucchini with the summer garden and grilling on the back porch, we rarely ever buy zucchini at the store. But given that it’s still chilly outside (and our garden is definitely in hibernation mode), I broke down and picked up some zukes at the store last week. This Healthy Zucchini Bisque is an easy, go-to soup when you need to detox a bit after all of the delicious winter comfort food. Do you guys do that? My wife and I will occasionally do detox weeks where we cut out desserts and eat a bit healthier.
In general, we do a pretty good job of balancing our meals around here, but every once in a while you just need to detox a bit. And that’s where this Healthy Zucchini Bisque comes in. I do use a bit of butter for sauteing the zucchini and onions, and then I stir a bit of sour cream into the finished soup. The result is a nice creamy soup with tons of flavor. So grab some zukes and whip up a batch of this soup for lunch this week.

Healthy Zucchini Bisque

Ingredients
- 1½ pounds zucchini
- ¼ cup unsalted butter
- 1 medium white onion chopped
- 2 tsp garlic diced
- 3 cups low-sodium chicken broth
- ½ cup sour cream
- ½ tsp salt
- ¼ tsp black pepper
- {optional garnish} Parmesan cheese grated
Instructions
Wash zucchini and slice into thin slices; set aside.
Using a large skillet or a Dutch oven, melt butter over medium heat. Add zucchini, onions and garlic; sauté until soft but not browned (~5 minutes).
Add chicken broth and simmer for 15 minutes, or until vegetables are tender.
Using a stick blender, blend until smooth.
Add cream, salt and pepper; stir until well combined.
{Optional} Garnish with freshly grated Parmesan cheese before serving.
