Recently I’ve come to realize that I have a very unhealthy attachment to Mexican flavors. It’s pretty much the only thing I crave on a 24/7 basis. We love homemade taco sauce and everything that comes with that.

With that attachment comes the need to find more ways to get delicious taco-esque flavors into my belly to change things up.

After spending 5 days in Jamaica lounging around in the sun, eating and drinking 24/7… the desire to actually cook dinner is pretty much non-existent now that we’re home.

Since you already know I pride myself on being a lazy cook – you have to know it’s gotten worse post-vacation.

If I can’t throw it all in one pan and do absolutely nothing but eat it in 30 minutes, it’s not happening in my kitchen.

Microwave nachos, for example, are our fall back meal whenever we have no desire to adult and make a “real” dish to devour.

However, there are only so many days you can fall back on the same meal, that’s when the Quinoa Enchilada dish comes into play.

It goes without saying, I needed some real adult food in my life. Since my Mexican Flavors were surely lacking in Jamaica that’s about all I crave right now and this Quinoa Enchilada dish puts everything I need in one pan.

One Pan Quinoa Enchilada for those quick weeknight dinner meals to the rescue. Toss it all in one pan and dinner is served in under 30 minutes. Mexican flavors, a meal made in under 30 minutes AND only one dish... Heaven. (Gluten Free, Dairy Free)

  • 1 pound ground turkey (or use our vegetarian meat replacement)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 small sweet potato, chopped
  • 1 cup quinoa, rinsed
  • 1 cup water
  • 2 Tablespoontaco seasoning
  • 1 (19 oz) can mild enchilada sauce
  • 1 (4oz) can diced roasted green chiles
  • Pinch of salt and pepper
  • ½ cup shredded cheddar cheese (or dairy-free alternative)


  • 1. In a large skillet on medium heat, brown turkey meat, drain grease out of pan.
  • 2. Stir in black beans, sweet potato, quinoa, water, taco seasoning, enchilada sauce, roasted green chiles, and salt and pepper to taste.
  • 3. Cover skillet, turn down to low-medium heat. Cook 20-25 minutes or until quinoa is fully cooked and tender.
  • 4. Remove from heat.
  • 5. Sprinkle cheddar cheese over quinoa enchilada, cover again for 2 minutes or until cheese melts.
  • 6. Serve immediately.

      Thank you for bringing that to our attention. Most of our recipes are dairy-free friendly and I simply forgot to add that note to the recipe card. The only time we mark it dairy-free is when we’ve personally tested it out with the dairy-free alternatives. You can easily swap the cheese with a dairy-free cheese alternative for this recipe.
