These Banana Pancakes with Brûlée Bananas are a terrific breakfast recipe for the cold chilly months. They are made with whole wheat flour, which gives them a hearty, earthy quality that is a perfect match for the sweet, caramelized bananas on top.

Personally, I feel there is a pancake for all seasons! And these are great for cozy winter, mornings. Try my Dutch Baby Pancake in the spring!

Intimidated by brûlée bananas? Don’t be! They are a cinch to make under the broiler! For a bigger nutritional punch, these bananas would also be great on top of my Oat Flour Pancakes too!

Step#1: Combine the Dry Ingredients

  • Homemade pancakes are so easy to put together and taste so much better in my opinion than anything out of a box.
  • You’ll first whisk together the flour, sugar, salt, and baking powder.

Step#2: Add the Wet Ingredients

  • Once whisked together you’ll add milk, eggs, and melted butter, and really that’s all there is to it!
  • I’m a big fan of adding melted butter to pancake batter, it gives them such a soft, almost crepe-like texture!

Step#3: Cook the Pancakes

  • One of the best investments I ever made once we had kids, was on a stovetop griddle.
  • Especially when making pancakes! It makes it so much easier to cook 3-4 at a time and get into high gear of “pancake production”.
  • They are also ready handy for making Quesadillas and Grilled cheese sandwiches too!

How long does it take for a pancake to cook?

  • Pancakes take about 1-3 minutes on each side, assuming your pan is preheated and ready to go.
  • They’ll take a bit longer on the first side 2-3 minutes. And then it’s easy to tell when the pancakes are ready to flip since they will start to show little air bubbles and rise up.
  • Once flipped allow them to cook for another 1-2 minutes on the other side.

How To brûléebananas?

  • I recommend slicing the bananas on the diagonal to help coat them well with sugar.
  • It also will make for a prettier garnish that way when you go to plate them up.
  • Then place on a flat cookie sheet under the broiler until caramelized. This will happen quickly so it’s best to not walk away!

How Many Bruleed Bananas to Make?

  • I figure about a banana per person since once they taste those crunchy, caramelized bananas everyone always wants more!
  • They’re also great topped on some warm oatmeal too.

Drizzle with a little warm maple syrup and top with some raw walnuts and you’ll have quite a little tasty weekend treat on your hand! Enjoy!

Banana Pancakes with Brûléed Bananas

Yield: 12 pancakes

Prep Time: 30 minutes

Cook Time: 10 minutes

Ingredients

For Pancakes:

  • 1 ½ cups (180g) whole wheat flour
  • 2 tbsp (25 g) sugar
  • 2 1/2 tsp (12.5ml) ( baking powder
  • 1 tsp (5 ml) salt
  • 1 ½-1 ¾ cups (350-410 ml) milk
  • 2 eggs
  • 4 tbsp (60 ml) melted butter

For Garnish:

  • 4-5 Bananas
  • 3 tbsp sugar in the raw aka “Turbinado" sugar
  • Maple Syrup
  • Walnuts

Instructions

  1. Preheat oven to broil setting.
  2. Meanwhile slice bananas on the diagonal. Dip one side generously in raw sugar. Place cut side down, sugar side up on a baking sheet.
  3. Play tray on upper rack, as close to the heating implement as it will go. Broil for 2-3 mins until sugar is caramelized and bubbling. Remove from the oven and allow to cool.
  4. Meanwhile, in a large bowl whisk together the flour, sugar, baking powder and salt.
  5. Then add 1 ½ cups (350 ml) milk, eggs and melted butter. If too thick add ¼ cup (60 ml) more of milk.
  6. Heat griddle to medium high. Ladle out pancakes and allow to cook. Flip once pancakes are set and small bubbles appear. Cook 30 seconds on the other side.
  7. Pile pancakes high, 3 to a stack placing a pat of butter in between each stack. Garnish with bruleed bananas on top, a drizzle of maple syrup and a few chopped walnuts. Enjoy!
